One of the toughest task I face as a cook in my family, is making sure I prepare balanced meals every day. If you have ever tried to make sure you follow the Vegetarian Pyramid to calculate the servings of different foods, you will know what I am talking about. Though nowhere close to perfection that I strive for, I try my best to do justice with the means available to me on a day to day basis.
My collection of recipes from all resources are those that satisfy this need. Among them is this gem of a meal. Wholegrain, Legumes, Vegetables, Dairy and other nutrient dense accompaniments makes this a winner for me. Its a wonderful combination of looks, flavor, ease and fulfillment. Few shortcuts (like frozen veggies and leftover/storebought chapathi(s)) makes this even simpler and great for a weekday meal.
