Its summer, the blissful days when I don’t have to worry about school and the likes. But I am not free from packing lunch and snack boxes unfortunately (no) thanks to sport camps and office! Though I get an additional hour for cooking, the heat doesn’t inspire me to spend much time in the kitchen. So, quick meals are on the menu. One of the easy things to make is pulao. Any vegetable or legume based pilaf are not only nutritious but easy as well.
Now add OPOS© cooking to the mix, you are literally done the whole packing business in under 30 minutes – from start (chopping, soaking) to finish (packed boxes and cleaning the kitchen). I have to make breakfast and then lunch (for the boxes) along with packing the snack box for both my husband and kid. With OPOS, this task becomes stress free. Take this pulao for example. Bright orange and green peas with mild spices come together to make simple pulao. I paired it with mixed vegetable curry (again pressure baked/OPOS’ed for about 5 minutes in another pressure cooker) and spinach raita (but blended the spinach into puree).
