Our most favorite way to enjoy broccoli is by roasting it. My little one and me especially enjoy munching on it even during our evening snack time. I started roasting it few years back when I realized that this stood a perfect substitute to my addiction of munching chips.
This is a simple, hassle free recipe with very few ingredients. It takes very little effort as well. Since my dude loves it , I try to increase the bang for the buck with additional nutrition by drizzling hemp oil or Flax oil. At times, I even sprinkle it with Nutritional Yeast instead of cheese for a Vitamin B12 boost. To make a substantial meal, I thrown in some Cauliflower or for a protein boost, some cooked chickpeas.
