One thing that the dudes in my house absolutely love is a baked, crispy mac and cheese. The last experiment of Mixed Bell Pepper Macaroni and Cheese was a huge hit. So much so that instead of lots of leftovers that I was counting on, I just had around 2 cups of it. Since I could not make a meal out of it, I thought I will do the next best thing – use it up as a snack.
To say that my little one got excited is putting it mildly; not to speak of the enthusiasm of his dad. They love their snacks and would gladly pass the tea rusk I “generously” serve them on a weekend. Fried goodies are always welcomes (duh!) and this was a massive hit. Whoever said, the way to a Man’s (and a boy’s) heart is through his stomach was right. They made me feel special and how – and all this for a fried mac and cheese! Seesh! BOYS!
You can use your own recipe for Macaroni and Cheese to make this. Just make sure to chill it overnight (at least). I used Bell Pepper Mac and Cheese with Panko for this recipe and the combo of Panko and additional breadcrumbs made this addictive. Since there were many nutritious elements to this snack, the cook in me was happy and satisfied as well. (...)
