Breakfast is an important meal in our house. My other half is especially particular about his protein and hence I rely on eggs heavily (and few minimal other options) in the morning. But in this frantic search for protein, the foods we grew up with seems to have taken a huge backseat. While Idlis and Dosa do have some amount of protein in them (thanks to lentils), the total amount is unsubstantial to his needs.
So in my quest to make sure our foods still make a prominent placement in our weekly meals, I started making fusions with egg. The first time I came to know of Egg Dosas was with a funny incident that my father told me years ago. My mother (like me) is quite averse to eggs, the smell included. Eating out/ ordering from restaurants were practically rare in households those days but on this particular day, my mother being very sick with fever and cold, my father bought two variety of dosas from the restaurants. One was Egg dosa which he got for himself. But by mistake my mother supposedly had eaten it with full gusto, while my father was attending to something else. The blocked nose and a dead palate seemed to have camouflaged the egg – or so she says
My father though prudent enough to keep quiet then, has made sure to remind my mom (and his children) of this incident from then on, every time my mom makes a fuss about eggs . Anyways, this is an easy option to make any time – Breakfast, Lunch or Dinner and makes for a filling meal for both kids and adults alike. My son eats it as it is while my husband prefers it with idli chutney powder (mixed with sesame oil). To enhance the nutritional meter, I add in some quinoa to it as well. So if you have leftover quinoa, just add some to this.(...)
