Every year brings new set of challenges. This year sees me embarking on a new journey that I have been promising myself to embark on for ..err..well, ever since I remember but never took. Just like anything new, its frustrating, its extremely difficult and I am still working out the process. But its a journey for ME, for myself and its high time I did it after all. With a substantial chunk of daylight hours spent outside the house every day, I find completing my daily household chores a daunting task. I am still in the frazzled stage trying to get my task done, hoping I will soon get to fine tune all the details. My hobbies have taken a back seat especially Chefinyou. But I am cooking as always. But now my cooking is that of the “get done soon” variety.
In my opinion, fusion cooking works best for these types. Like this idea from Tarla Dalal. I can entertain not only my family but also friends making them feel important without actually having to slog my hours or use fancy ingredients. Both the dudes LOVE this Pav bhaji fondue and its on a repeat recipe list. Its extremely customizable. If you like more onion flavor, increase it. Favor tomatoes? Throw in additional tomato. Can’t live without heat? Bump up the Pav Bhaji masala and chilli powder. If tomatoes are tart, throw in some sugar. On a diet? Substitute Coconut oil and skim milk for the butter, regular milk and cream. Just make it your own, but bring out the fondue pot to make it all look and feel special. (...)
